Meta tags are increasingly irrelevant on today's web. But even if you argue that they are relevant to ranking and indexing on the "machine web", they are irrefutably useless to visitors to your website.
So, save a few negabytes by cloaking the meta tags for non-robot visitors. If you are certain that the client is a normal person browsing the site, serve them a version of the page with all the <meta> tags removed.
